Christmas is just around the corner! It’s the time of the year to give and treat yourself. What better way than with these cute mini microwave Christmas Puddings. These tasty desserts are quick to make! They are sure to satisfy the taste buds with festive flavours, minus the long cooking times.
Using tea cups to keep the traditional shape, either serve straight out of the cups, or on a plate with custard. Alternatively wrap and decorate them to gift them to family and friends. This recipe uses our 100% Australian Dried Shredded Fruit and a dash of rum. But you can make them kid friendly by using non-alcoholic rum, essence or pineapple juice.
Our 100% Australian Dried Shredded Fruit is great to have on hand for easy additions to muesli or baking over the festive season.
Gin Gin & Dry 100% Australian Dried Shredded Fruit Mini Microwave Puddings
Ingredients
- 1 Cup of 100% Australian Dried Shredded Fruit
- 2 tbsp of rum (optional, but replace with same amount of juice to keep moisture)
- 50g of butter
- 1/2 cup self-raising flour
- 1 large egg
- 1/4 cup almond meal
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground mixed spice
- 1/2 cup of brown sugar
- 2 x small microwavable tea cups or bowls to suit pudding shape. Ours pictured held around 250ml of liquid.
- Baking paper cut to line the bottom of the tea cups. This helps with removing the puddings from the cups. If serving in the tea cups then you can leave this step out.
- Extra butter to coat the tea cups to prevent sticking.
Method
1. In a small microwaveable bowl melt the butter in the microwave for 30 seconds.
2. Add the rum (if not using alcohol you can replace with pineapple or apple juice) and the 100% Australian Dried Shredded Fruit and mix well.
3. Heat the mixture, covered on high for another 30 seconds and let rest during step 4 so the fruit absorbs the liquid.
4. Use extra butter to coat the 2 tea cups. Cut a small round disc of baking paper that will fit the bottom of your cup.Then scrunch the papers to make it easier to place at the bottom of the cups.
5. Fold in the rest of the ingredients into the fruit mixture.
6. Divide the mixture evenly into the 2 cups. They should fill a 250ml tea cup to just over half way.
7. Cook in the microwave, one cup at a time for 90 secs or until the pudding rises. Then let them stand for 2 mins to cool before turning them out onto a plate.
8. Serve with custard or ice-cream. Or if you would like to gift them, wrap in baking paper, followed by your choice of cloth and decorations. Enjoy!
