100% Australian Dried Shredded Mango

Instead of chopping dried mango, consider using our 100% Australian Dried Shredded Mango. This tasty product is made from the same high-quality dried mango as our sliced variety, but consists of smaller pieces and crumbs that are captured after detraying our slices. It’s ideal for mixing into cookie dough, muffin batter, or scone recipes. Additionally, it makes a fantastic topping for ice cream or yogurt. Mango & Passionfruit Rocky Road
Ingredients
- 1 cup of Gin Gin & Dry 100% Australian Dried Shredded Mango
- 1 cup of Gin Gin & Dry 100% Australian Dried Passionfruit
- 1 cup of mini white marshmallows
- 1 cup of shaved coconut
- 25g of meringue kisses, crumbled
- 1 teaspoon of grated lime zest
- 100g of macadamia nuts toasted
- 225g of white chocolate
- 12 tablespoons of coconut oil or copha
Method
1. Prepare a 10cm x 25cm baking dish by lining the bottom with baking paper.
2. Toast the macadamia nuts in a pan. Be careful not to burn them.
3. Melt your white chocolate in the microwave or in a double boiler. Add and stir to combine the coconut oil or copha until smooth.
4. Place all the dry ingredients, excluding the passionfruit into bowl, add the lime zest and mix until combined.
5. Pour over the white chocolate and mix well.
6. Transfer to the prepared baking dish and press down firmly.
7. Scatter on top the dried passionfruit pieces and press them gently into the mix.
8. Refrigerate overnight or for minimum of 2 hours to set.
9. Remove from fridge and leave for 10 minutes before cutting into bite size pieces to serve. Enjoy!
