Mango Rum Balls – are you naughty or nice?
When it comes to entertaining over the holiday season, it’s always nice to fall back on those quick, easy and no bake recipes. Rum balls are classic example! Since it’s nearly Christmas, we thought we would treat you with two versions of these yummy treats featuring our 100% Australian Dried Mango.
Depending on what you like try our “Naughty” Mango Rum Balls and “Nice” Mango (No-Rum) Balls. We know you will enjoy them both!
“Naughty” Mango Rum Balls
Ingredients
- 250g Milk Arrowroot biscuits crushed
- 395g Sweetened Condensed Milk
- 1 cup approx. 160g of our 100% Australian Dried Mango
- 1 cup of desiccated coconut
- 1 zest of lime
- 2 tbs of white or spiced rum (or adjust to your desired strength)
- 1 cup of reserved coconut to decorate
Method
1. Place biscuits and dried mango into a food processor. Process until coarsely chopped.
2. Transfer mixture into a large bowl and add in condensed milk, white rum, coconut and the zest of 1 lime then mix well.
3. Roll a tablespoon of mixture at a time into balls.
4. Roll balls in the reserved coconut and coat well. Place on a lined tray and refrigerate for 1 hour or until set.
5. Keep stored in airtight container in the fridge.
And if you are keen to make a healthier non-alcoholic version try the below recipe that swaps out the condensed milk with coconut oil and orange juice, and biscuits with crushed nuts.
“Nice” Mango (No Rum) Balls
Ingredients
- 1 cup or 150g of raw cashews or almonds
- 1 cup approx 160g of our 100% Australian Dried Mango
- 1 cup of desiccated coconut
- 1 zest of lime
- 4 tbsp coconut oil (in liquid form, warm up if solidified)
- 3 tbsp fresh orange juice, set aside extra if you find the mixture is too dry
- 1 cup of reserved coconut to decorate
Method
1. Add dried mango and nuts into a food processor then pulse till coarsely chopped.
2. Add the coconut, lime zest and pulse till well combined.
3. Transfer to a large bowl, add the coconut oil and orange juice to bring it all together.
4. If you find the mixture is too dry and not holding its shape, add a little more orange juice at a time till it comes together.
5. Squeeze a tablespoon of mixture at a time into balls.
6. Then roll balls in the reserved coconut and coat well. Place on a lined tray and refrigerate for 1 hour or until set.
7. Keep stored in airtight container in the fridge.
