Spring Baking with Gin Gin & Dry
Spring is in the air and it’s a great time of the year to catch up with friends. Why not treat your guest to an afternoon high tea! Scones are a traditional favourite! The perfect scone has a slight crunch on the outside and is soft and light on the inside. But add Gin Gin & Dry 100% Australian Dried Strawberries and you get an extra punch of sweetness with a hint of tart flavour. Dried strawberries are perfect for scones! They don’t add any moisture to keep the scones light and fluffy texture. The ribbons of colour and flavour makes a fun addition to this traditional afternoon tea treat. They are delicious served hot with butter, no need for cream and jam!
Strawberry Scones
Ingredients
- 1 cup of chopped Gin Gin & Dry 100% Australian Dried Strawberry Slices
- 350g of Self-Raising Flour
- 2 tsp Baking Powder
- 85 g of Cold Butter
- 4 tbsp Caster Sugar
- 160 ml Milk
- 1 tsp Vanilla Extract
- 1 egg for Egg Wash
Method
1. Preheat the oven to 180°c and line a baking tray with baking paper.
2. In a large mixing bowl add self-raising flour, sugar, salt, baking powder and whisk together.
3. Add spoonful of butter at a time to the mixing bowl and combine the butter and flour using your fingertips until the mixture resembles breadcrumbs.
4.Make a well in the center then add the milk and vanilla. Gently mix together with your hands until the mix forms a dough.
5. Dust your work surface with flour and add a little to a rolling pin. Gently roll out the dough to a thickness of 2-3cms. Evenly spread the dried strawberries across the dough, carefully pressing the fruit in. Fold in half and roll back into a ball before flattening again to a thickness of 2-3cms.
6. Use a large cookie cutter to cut out circles and place onto your lined baking tray.
7. Gently egg wash the scones with a pastry brush. Then bake in the oven for around 12 to 15 minutes.
